    When I prep my eggplant I place the cut up eggplant in a colander, Wet the eggplant and salt them down let them sit a half hour then hose them off. It really takes the bitterness away from the taste

      Sharon, I salt them too and lay them out on the board sort of on an angle so the bottoms aren’t flat then pat them dry with a paper towel. This was such a sweet eggplant I probably could have skipped the salt step.
