I tried something new from the farmer’s market. It’s the pale zucchini, called sweet zucchini. It had a nice flavor, milder than regular zucchini and almost no seeds. I brushed rounds with a little olive oil and grilled them. Topped with diced grilled red onion, grilled corn, goat cheese and chopped fresh parsley. Drizzled with a balsamic vinegar reduction to finish.
