Salad Days

It’s easy to grow lots of greens in a small space.  These were grown in a 4 x 6 raised bed.  Everyone should try it.  This year I did mixed lettuce, spinach, red leaf lettuce and kale.

Basic Vinaigrette:

2 tbsp. Olive Oil
1 tbsp. Vinegar (wine, sherry, rice, balsamic, etc.)
1 tsp. Dijon mustard
1 tsp. chopped fresh thyme
Salt and Pepper

Middle Eastern:  Mixed greens, falafel, kalamata olives, tomato, cucumber, parsley, yogart-tahini dressing

Dressing:

2 tbsp. Tahini
1 small garlic glove minced
1/2 cup plain yogurt
2 tbsp. Olive Oil
Lemon Juice (2-3 tbsp.)
Course sea salt and freshly ground black pepper

Sweet Vinaigrette:

2 tbsp. Olive Oil
1 tbsp. Rice Vinegar 
1/2 tbsp. balsamic vinegar
1 tsp. Dijon mustard
2 tsp. Fig jam
Salt and Pepper

Blackened Salmon Salad:  Grilled blackened salmon, radish, red onion, grated parmesan with honey mustard vinaigrette

Spicy Coleslaw

Try a little jalapeno and go light on the mayo to make a brighter salad.

Blend dressing by whisking together first 4 ingredients in small bowl.  Toast the celery seed lightly in skillet and add to dressing.  Toss remaining ingredients and stir in dressing.  Chill for an hour or two to meld flavors.

  1. 2 tbsp light mayo
  2. 2 tbsp cider vinegar
  3. 1 tbsp olive oil
  4. 1 tbsp honey
  5. 1 tsp toasted celery seed
  6. 2 tbsp chopped cilantro (or flat leaf parsley)
  7. dash cayenne
  8. 1/2 tsp black pepper
  9. 4 cups shredded cabbage (3 green and 1 red)
  10. 1/2 cup julienned  red pepper
  11. 1/2 cup julienned carrot
  12. 1/4 cup chopped scallion
  13. 1 diced jalapeno

 

Roasted asparagus salad

Clean mixed greens.  Roast aspargus with sliced red onion drizzled with olive oil, seasoned with salt and pepper for about 8 minutes at 450.  Assemble salad with greens, mixed roasted vegetables roughly diced, toasted cashews, shaved parmesan, dressing, and cracked pepper.

Bean Salad

I like to use broccoli but you can also try fresh green beans.  If you can’t find Garlic Expressions dressing, a light italian dressing works well.  Kalamata olives would also work nicely.

  • 1 can garbonzo beans
  • 1 can light red kidney beans
  • 1 can whole artichoke hearts-quartered
  • 1 can burgandy pearls italian style olives-halved
  • 3/4 cup diced red onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrot
  • 1 cup chopped fresh parsley
  • 1 pepper chopped
  • 2 cups chopped broccoli
  • 1 package of grape tomatoes
  • 4 oz crumbled feta cheese
  • 2 tsp lemon zest
  • Juice of 1/2 lemon (about 2-3 tbsp)
  • 1/3 cup Garlic Expressions salad dressing

Rinse and drain beans.  Place beans and remaining ingredients in large bowl gently stir.
