Spaghetti with Cauliflower Walnut Meat Sauce

 

4 cups cauliflower (about 1/2 large head), 1 cup walnuts, 2 tbsp. parmesan, 2 tbsp. soy, 2-4 tsp balsamic vinegar, 1 tsp onion powder, 1/2 tsp garlic powder

Place the cauliflower, walnuts, parmesan cheese, soy sauce, vinegar, onion powder, and garlic powder into the bowl of a food processor. Pulse until finely chopped. Distribute the mixture evenly on the baking sheet and bake for about 30 minutes until starting to brown, stirring once during baking.

Cool and add to sauce.

For sauce:  one diced onion and two cloves garlic sautéd in a little olive oil, add spices:  oregano, red pepper and crushed fennel.  add 1 large can diced tomatoes and 1 jar marinara.  Simmer for 20 minutes
