Ground Venison Enchiladas with Red Chile Sauce

This is my first time cooking with venison. I was very impressed by how lean the meat was and flavorful too. I’d chose these over ground beef anytime. Fresh chile sauce beats canned every time. Mine is very mild. I used guajillo and pasilla chiles in this one. I made a small batch of hot sauce as well to add a little heat. I garnished these with finely shredded cabbage and fresh pico de gallo.
